Some business models don’t fit any platform: product configurators, custom-calculated prices, multi-step purchase processes. In these cases I build the ecommerce from scratch on Symfony — headless with a modern frontend, or server-side with Twig templates.

When your sales model IS your competitive advantage: complex configurators, real-time calculated prices, flows no platform replicates. If a standard platform covers 80% of the need, I'll tell you to use that one.
Headless (API + separate frontend) gives maximum freedom to whoever designs the user experience, plus excellent performance; Twig templates reduce the moving parts and the costs. I choose with you, based on the team that will run it.
A custom build doesn't happen in two weeks. To reduce risk I often start from an MVP with the essential purchase flow, then build on top of it (see the Prototypes & MVP service).
